I just did. The last bite I had was just as overwhelming as the first one. Imagine a mildly salted slice of grilled pork, not too rare, but not too dry either. Then take a modest slab of salmon belly, cooked so perfectly that the fat penetrated the flesh, making it slightly crisp on the outside, tender on the inside, and leaving it with a flavor so subtle yet suddenly powerful as soon as your teeth sink into it. Put that on top of a humble amount of sauteed garden vegetables resting on a dollop of mashed potatoes mixed with a hint of wasabi(!). Leave a few drops of teriyaki sauce and hollandaise on opposite sides of the plate, and this is what you have:
